Mont Rose Aux Framboise

This is inspired by Natsumi sakura blanc. This is a beautiful yet tasty recipes. This almond cream tart filled with strawberry daifuku and finished with cream cheese and framboise cream. The strawberry I choosen is local type, it is more to sour taste but is perfect to balance the sweetness of the whole tart. Hope you all love it .



This recipes makes 2 pieces of 7.5cm diameter tart.


Ingredients:

Sweet pastry:

unsalted Butter 25g

Icing sugar 25g

Egg yolk 13g

Cake flour 64g (can use gluten free flour)

Salt a pinch (optional)

Vanilla essence 1/2 teaspoon


Almond cream:

Eggs 25g

Granulated sugar 25g

Almond powder 25g


Cream cheese:

Cream cheese 54g

Fresh cream/ whipping cream 32g

Granulated sugar 10g


Framboise (Raspberry cream)

Fresh cream/ whipping cream 100g

Framboise jam 10g (Can use strawberry jam or any)

Granulated sugar 6g (optional)

Red colouring as needed


Strawberry filling

Strawberry 2 pieces

White or red bean paste 70g


Decoration

White chocolate deco 2 pieces

Strawberry 1 piece

Chervil as needed

Blueberry 4 pieces

Snow powder as needed
